Instructions
Heat oven to 350°F. Grease and flour 2 9-inch layer pans or 1 13-by-9-by-2-inch baking pan; set aside.
In large mixing bowl, combine sugar, flour, cocoa, baking soda and salt. Add milk, shortening, eggs and vanilla. Blend ingredients, using electric mixer on low speed, for 30 seconds. Beat on medium speed for 3 minutes.
Pour into prepared pans. Bake for 30 to 35 minutes for layers; 35 to 40 minutes
Mocha Cream Frosting
2 2/3 cups confectioner’s sugar
1/4 cup cocoa
6 tablespoons butter or shortening
2 tablespoons strong coffee
2 to 3 tablespoons milk
1 teaspoon vanilla extract
1/4 cup cocoa

Combine confectioner’s sugar and cocoa.
In small bowl, cream butter with 1/2 cup sugar mixture. Add remaining sugar mixture alternatively with coffee and milk, beating to spreading consistency. Blend in vanilla. Yields about 2 cups.
