Jamaican jerk chicken recipe


Ingredients for Jerk Chicken Recipe

  • 1 tablespoon honey
  • 1 tablespoon Dried thyme or 2 Tbsp fresh thyme leaves, chopped
  • 2 tablespoon  Ground pimento  
  • 1  teaspoon Cayenne pepper
  • 1  teaspoon paprika
  • 11/2 teaspoon sea salt
  • 1/2 teaspoon seasoning salt (no MSG)
  • 1/2 teaspoon  black pepper
  • 2 teaspoon all purpose seasoning
  • 2 teaspoon jerk seasoning
  • 1/2 peg fresh mince garlic
  • 1/4 cup Soy sauce
  • 1 Scotch bonnet pepper chopped
  • 1/4 cup Ketchup  
  • 1/4 cup Kraft BBQ sauce  
  • 1 cup Onion -- finely chopped
  • 3 lb chicken quarters

     for Jerk Chicken Recipe
    1. Trim excess fat from chicken. In a large bowl, combine all the dried ingredients and wet ingredients together.2. Add the chicken breasts, cover and marinate for at least 1 hour, longer if possible.
    Grilling MethodPreheat an outdoor grill. In Jamaica we grill our chicken outside using pimento wood.
    3. Remove the chicken quarters from the marinade and grill for 6 minutes on each side or until fully cooked or juices run clear.

    While grilling, paste with the marinade in the bowl. Bring the leftover marinade to a boil adding some ketchup and a dash of soy sauce and serve on the side as dipping sauce.

    Cut chicken into pieces. Best served with festivals or rolls accompanied with a glass of special juice.
